Now we’re going to make a beautiful dessert or afternoon snack which is the Baked Peaches with Coconut Cream with the protein in our yogurt. It can be vegan yogurt or you can have dairy if you’re not a vegan.

It’s all about how to find clever ways of adding protein into your diet which is plant-based and at the same time not missing out on any treats.

This is the healthiest dessert you’ll probably ever make and the prettiest, Right?

We’ve got the coconut caramel and a delicious dollop of yogurt on our baked peaches. I can’t wait to dig in. -by Andi Lew, Wellness Expert.

Instructions

  1. So let’s get started by baking the peaches. We start off by grabbing beautifully ripe stone fruit.
  2. Cut them in half put them on a baking tray and pop them in the oven.
  3. Whilst the peaches are baking, let’s make the Coconut Caramel Zest Slim Healthyroo yogurt.
  4. Now we need to get some protein. The recommended serving size is just one or two scoops a day.
  5. So let’s add two scoops into our yogurt.
  6. This is creating our coconut cream which will dollop on the end once our peaches are all nice and warm and baked. The beautiful creamy cold garnish is going to give it a lovely texture.
  7. Dress it with our Zest Slim Healthyroo Yogurt
  8. Coconut caramel goes well with coconut shreds.
  9. Some pepitas for good fats from plants. Good fats help your hormones and the nervous system. To finish, dust it with cinnamon.
  10. If you’ve got a sweet tooth, then a little bit of monk fruit sweetener as icing sugar on top.

For the Smoothie Base:

  • 2 PEACHES
  • 2 TSP HEALTHYROO ZEST SLIM (CHOOSE YOUR FLAVOUR)
  • 1 FULL CUP VEGAN YOGURT OR DAIRY YOGURT
  • SOME PEPITA SEEDS
  • MONK FRUIT SWEETENER
